Quick Coffee Cake

1-1/2 c flour, sifted
2 t baking powder
1/2 t salt
1 t cinnamon
1/2 c sugar
Combine dry ingredients and sift again into bowl.
1 egg, well beaten
1/2 c milk
3 T butter, melted
Combine wet ingredients.
Stir wet ingredients into dry ingredients.
Transfer batter to 8-inch square pan. Add a topping of cinnamon and sugar, dotted with butter pieces. Bake at 400 degrees Fahrenheit for 20 to 25 minutes or until tester comes out clean.
Before the Internet, I used to go to the library and take out five cookbooks at a time so I could compare recipes and work on my own versions. This little gem, from one of my favorite books by Beard that I renewed constantly as a library rental back in the seventies, has remained a constant exactly as is.
It’s easy enough, especially with a little prep the night before, to whip up to take to the office. Of course, if you have an especially hungry or big group, you might need to make two. Definitely make this when you want to sit and enjoy a little treat with that great cup of coffee and the warm company of a good friend.
